Green salad with mackerel

This salad combines classic Nordic flavors and is packed with taste. Mackerel is a fantastic fish — simple, affordable, and a delicious way to enjoy seafood.

Ingredients

  • 1 whole smoked mackerel (250 g)
  • 1 romaine lettuce
  • ½ cucumber
  • 6 radishes
  • 1 spring onion
  • 1 large handful of dill
  • 1–2 large handfuls of chives
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 4 tbsp skyr 
  • 2 cloves of garlic
  • Salt and pepper
  • Olive oil

Directions

  1. Prepare the fish: Remove the meat from the smoked mackerel, making sure to discard all bones. Place the fish in small chunks in a large bowl.
  2. Prepare the vegetables: Wash all vegetables and herbs. Slice the radishes and spring onion thinly, and roughly chop the lettuce. Halve the cucumber lengthwise, scoop out the soft center with a spoon, and slice. Add all the vegetables to the bowl with the mackerel.
  3. Make the dressing: Finely chop the dill and chives, and place them in a small bowl. Add the skyr, lemon zest, lemon juice, pressed garlic, salt, pepper, and a drizzle of olive oil. Mix well until smooth.
  4. Combine and serve: Pour the dressing over the salad and toss until evenly coated. Serve with boiled or baked potatoes. The mackerel salad also works perfectly as a topping for rye bread.
