Padrón Peppers with Dip

Padron peppers with dip

Grilled or pan-fried padrón peppers make a fantastic snack or side dish.

Vegetarian (vegan option available)

Ingredients

  • 200 g padrón peppers
  • 2 tbsp mayonnaise (vegan: use a vegan mayonnaise)
  • 1 tbsp sriracha
  • ½ lemon
  • ½ tsp chili flakes
  • Salt

Directions

  1. Start with the dip: Mix 2 tbsp mayonnaise with 1 tbsp sriracha.
  2. Cook: Rinse the padrón peppers and fry them in a pan over high heat with a splash of olive oil and ½ tsp chili flakes. When they start to blister and soften, squeeze over the lemon juice and sprinkle with a pinch of salt.
  3. Serve on a platter with the dip.
