Ingredients
- 250 g asparagus
- Freshly grated Parmesan (vegan option: nutritional yeast or vegan cheese)
- Zest from ½ lemon
- Olive oil
- Salt & pepper
Directions
- Rinse the asparagus and trim the tough ends (about 3–4 cm from the bottom). You can either cut or snap them off.
- Heat a pan over high heat. Once hot, add 1 tbsp olive oil and the asparagus. Fry for 5–7 minutes, or until the asparagus turns bright green and slightly charred. Season with salt and pepper to taste, and toss well.
- Serve on a plate topped with freshly grated Parmesan and lemon zest.
