PAN-FRIED ASPARAGUS WITH PARMESAN AND LEMON ZEST

A fresh and vibrant side dish that’s perfect for spring and summer. It pairs beautifully with fish, grilled vegetables, or whatever your heart desires – a simple yet elegant sidekick.

Vegetarian (vegan option available)

Ingredients

  • 250 g asparagus
  • Freshly grated Parmesan (vegan option: nutritional yeast or vegan cheese)
  • Zest from ½ lemon
  • Olive oil
  • Salt & pepper

Directions

  1. Rinse the asparagus and trim the tough ends (about 3–4 cm from the bottom). You can either cut or snap them off.
  2. Heat a pan over high heat. Once hot, add 1 tbsp olive oil and the asparagus. Fry for 5–7 minutes, or until the asparagus turns bright green and slightly charred. Season with salt and pepper to taste, and toss well.
  3. Serve on a plate topped with freshly grated Parmesan and lemon zest.
