Ingredients
- 2 large tomatoes
- 2 firm plums
- 1 buffalo mozzarella (vegan: use vegan mozzarella)
- A large handful of basil leaves
- Olive oil
- Salt and pepper
Instructions
- Start by: Remove the pits from the plums, then cut both plums and tomatoes into bite-sized pieces. Toss them with a generous splash of olive oil, salt, and pepper, and arrange on a plate or in a serving bowl.
- Mozzarella: Tear the buffalo mozzarella into bite-sized pieces and scatter on top.
- Serve: Finish with another drizzle of olive oil and top with fresh basil leaves.
