TOMATO & PLUM SALAD

Tomato and plum salat

A classic tomato salad with a twist of fresh, sweet plums that pair perfectly with mozzarella and tomato.

Vegetarian (vegan option available)

Ingredients

  • 2 large tomatoes
  • 2 firm plums
  • 1 buffalo mozzarella (vegan: use vegan mozzarella)
  • A large handful of basil leaves
  • Olive oil
  • Salt and pepper

Instructions

  1. Start by: Remove the pits from the plums, then cut both plums and tomatoes into bite-sized pieces. Toss them with a generous splash of olive oil, salt, and pepper, and arrange on a plate or in a serving bowl.
  2. Mozzarella: Tear the buffalo mozzarella into bite-sized pieces and scatter on top.
  3. Serve: Finish with another drizzle of olive oil and top with fresh basil leaves.
